SQF Food Sector Categories

Processed meats are under category 8 which I believe includes high risk RTE items however what category is fresh chilled MAP sausage and Kabobs?

Is anyone up to speed with the SQF food sector categories?

Appendix 1 of the SQF Code gives more detailed descriptions and examples of each Food Sector Categories. For meat and poultry, you have FSC 7 which applies to slautering, boning, and butchery operations, and FSC 8 which applies to processing where meat or poultry is the major component and includes value-added operations. Sausage definitely falls under FSC 8 and Kabobs likely would too because of the MAP packaging. It is best to discuss what FSC apply to your operation with your Certification Body. Ultimately, they will decide since they issue the SQF Certification.
