Need an Example of a Vacuum Packing Monitoring Record?

Has anyone got an example of a vacuum packing monitoring record they would like to share? I have identified vacuum packing of peeled and chipped potatoes as a CCP, therefore I need a record for the process, but I'm not sure what information should be recorded.

I am definitely no potato expert but this application seems rather unlikely to be a CCP, eg specific safety hazard (to final consumer) being controlled = ?
