Allergen Changeover Matrix?

Hello All,

 

I need to create an allergen changeover matrix.  Can anyone provide any input on how to put on together? Can anyone please post a copy of your changeover matrix so i can know how to create one.

 

We are a bakery, and we have 2 lines 

 

Line 1: Rugulah, Danish and Cinnamon roll

 

Line 2: Muffins and Brownies

 

 

All of which contain wheat, but two flavors of rugulah contain treenuts.  Walnut Rugulah and Pecan Rugulah

 

There are only a few muffins which contain soy bean oil (soy)

 

What are your thoughts.  

 

ps. our audit is in one month

It's common for companies which have ingredient allergens to schedule production such that you sequense (or cascade) the allergens. For example you may have a line where you start with the only allergen being wheat. Next muffins containing wheat and walnut. Next run wheat, walnut and soy. Then a clean to effectively remove allergen proteins and start a new sequense. Makes scheduling logistics a bit more complicated but cuts down on your allergen cleaning and verifications.

Also, you may not need to address soybean oil as an allergen in your process.  My company does not for the following reason:

Question: "Is soy bean oil an allergen?"

Answer: Highly refined vegetable oils are not considered allergens according to allergens experts. Because the protein from the soybean is typically removed during the refining of the oil, it is not considered an allergen.

Hello All,

 

Can anyone tell me if the Matrix has to be designed like a flow chart or can it be a statement that can be in the Allergen PRP binder.

 

And by any chance can any provide a sample of what one should look like..
