Why are eggs stored at ambient in supermarkets?

Just wondering why exactly eggs are stored at ambient in supermarkets, but their storage instuctions say refigerate at home?

Dear AdamR

 

That is done in that way to avoid fluctuations of temperatures; those fluctuations would have a higher negative effect than keeping the eggs to ambient temperature till purchase.  One premise is the quick turnover of stocks at the supermarkets

'After eggs are refrigerated, they need to stay that way. A cold egg left out at room temperature can sweat, facilitating the movement of bacteria into the egg and increasing the growth of bacteria.' - FSIS
