Sanitation of cold rooms

Dear friends

i would like to know your experience with cleaning cold rooms manintained below - 18 deg c considering the fact that there are always goods in them.

hence how can we find time to actually clean and sanitize a cold room.

was thinking from the point of view of fixing a schedule for cleaning the cold room.

will be grateful for your thoughts

IMEX of packed goods, the system is primarily self-maintaining assuming in good design/condition (otherwise can be a nightmare). Typical treatment  "brushed" down overnight since thawing not feasible. And in more detail at weekends.

it obviously relates to yr process schedule.

it might also relate to what you are storing and the actual condition. ????

thanks for your reply.

We store mostly frozen fillets (packed in corrugated/duplex cartons of 6 kg) well arranged on pallets. the cold room is of good design with no frost formation practically any where except for the evaporator (which is removed during defrost).

currently we just clean up any debris of packaging material on a daily basis and sweep the floor.

Dear Jairaj,
If your products are maintained at -18°C and are protected within their packaging I would think that you would not need to sanitise inside the Cold store. Removal of Gross debris on a regular basis should be sufficient. This is also my experience. Obviously it would be perhaps worthwhile carrying out a deeper clean during a full defrost when no product is present.
