What are the requirements for Food Safety Documents?

I was wondering what the requierements are for food safety documents.  We requiere an update Kosher Certificate, Letter of Guaranty and Insurance Certificate annually.  We also request other food safety documents like COC, Allergen Statements, HACCP Programs, 24 hour Emergency Contacts, etc from our vendors but, they send us once date in the past.  Is that acceptable?  Any help is appreciated.

Not totally sure what you mean by dated in the past?  If it is a Kosher certificate ir insurance certificate that has expired that would not be acceptable but if their HACCP Plan was reviewed 6 months ago or the COC covers last years production then a past date would be fine.  

 

We update our supplier approval every two years so a self audit filled out in November 2012 for example would still be fine.  It depends on the document.

Are you being audited to a specific standard? That might help set parameters.

We are doing a Siliker Audit but, would like to go SQF in the future.  I can't find how long documents are good for.  If they give us an allergen statement signed in 2012 will it be acceptable?  Or a Technical Data Sheet, Emergency Contact List, Container Spec, etc.  How often do they have to be renewed?

Hi. Review is normally annual or triggered by process change or procedure change. Keith
