Formulating a food defence plan

Hi Everyone.

 

Now I know the BRC Version 7 isn't even out till next year, but some bright sparks who are wanting to impress their own bosses are already asking what changes we are or have made to our HACCP.

 

One area I would be very grateful for some help with as we know this is coming, is how do I formulate a Food Defence Plan for our packhouse?

 

We pack soft fruit only, some grown on our farm and some from other growers, it is then shipped out via haulage contractors to various supermarkets.

 

If anyone has any information or tables they would be willing to share I would be very grateful.

As with any program prerequisites, you have to do is a risk analysis, in which you evaluate all the dangers in relation to their probability of occurrence and severity. You can use as a reference the ISO 31000 standard

The FDA website is a great place to start. Make sure you check out the Food defense training the FDA has to offer as well. I have also included a Attachment from AIB that might help you out as well.
