In 5.22 of the AIB consolidated standards it states, "  the facility has written specifications..........records are maintained".   What type of written specifications are they talking about?  What records would the inspector expect to see?  There isn't much information to go on in this section can someone please clarify this for me.  Thank you.

It has been a really long time since I have done AIB and I don't have the standard in front of me.....but written specifications usually refers to having written specifications for incoming materials and/or ingredients.  Written specifications are usually kept on final product as well.  So for example in your case it may be something like our is size A and the tolerance is plus or minus B.  Records would be whatever documents use such as receiving document or production documents showing that your specifications were met.

Written specification for raw materials, packaging materials, processing aids, work in progress, and finished product

- AIB Standard Required Documentation Appendix

And all quality records that proof your raw materials, ingredients, packagings, finished goods are met to specifications ( including Non Conformance Report if any deviation found).

Dear paconmatt,

How do your QA control raw materials when they arrive ?

Answer - they have specifications.

How do yr Purchasing Dept decide on which raw material Quality is needed?                   /

Answer - they have specifications.

At least the Auditor will expect them to because it should be the 1st document a Production line has to produce. Except that it's often scribbled on the back of a postcard.

if you wish to see some sample specification documents for ingredients and packaging, try searching for the model yoghurt haccp plan. There's about half a dozen in the thread.
