Chocolate sauce HACCP

Good afternoon all,

My company will begin packing chocolate sauce soon.  The product will come in premade, we will simply pack it into containers.  Does anyone have a sample HACCP plan for this type of process?  We currently deal with other types of sauces; BBQ, salad dressing, etc.  I'm fairly certain the chocolate sauce will not fall under our current HACCP plan, since the product has a pH higher than 4.6.  Any input is greatly appreciated.

It may be necesssary to elaborate what this actually means to get fully relevant replies.

To be more specific, we are planning on bringing in premade chocolate sauce/syrup.  We will then pump the product out of the bulk container and repack it into a retail size container, 12oz or gallon.
