Anyone have a HACCP Style Hazard Analysis for Fogurt?

Anyone know of any typical hazards associated with Fogurt?

 

This guy is a little out of my typical ballpark: 20% Canola fat, no allergens, 2 year stored frozen.... 

 

I seem to sway to canola fat having some issue ????

Sorry, is Fogurt    Faux yogurt (I dunno, made with soy or some hippy stuff), or frozen yogurt?

It is "Fogurt" .... made by a company called Yakima Fruit Works. The technical name is non-partisan fruit smoothie base.

But I'll tell you guys what, I've been doing smoothies for awhile and never heard of the stuff!

Water, canola oil, acacia gum, lactic, natural flavors and xanthan. pH of 4.1 (+/- 0.4)

I'm thinking Charles is right (extraterrestrial!)

For fruit fresh/frozen minimally processed I would say:

Biological - Salmonella, Escherichia coli O157:H7, Listeria monocytogenes, Protozoans, Parasites, Viruses SP; C. bot, C. perfringens, Bacillus cereus.

Chemical: Pesticides

Physical: Extraneous Material

Well depending on which literature you'd like to read, canola oil can either be very good for you, or toxic!

 

20% fat??? mmm your typical Greek is @ 9% fat (it amazes me all these low fat Greek style yogurts!) Lots of gums (ughhhh claggy!) low pH (very sharp ...or is there a ton of sugar to make it palatable!)

(Edit: I didn't see anyone actually say it was greek yogurt... it's like frogurt (Frozen Yogurt) just maybe their own label name like Yopa for YoCrunch Y was for Yocrunch and Opa was happy in some language YoCrunch was from)

 

First, let me say, in the United States there is no standard of identity for "Greek Yogurt".  As such anyone can put anything into a cup and say it's Greek yogurt.  Also Greek yogurt isn't really Greek yogurt it should be called strained yogurt... but I guess "Strained" doesn't sound as good as Greek.

 

But saying all of that a true strained yogurt shouldn't have added sugar in the base.  A true strained yogurt should only have skim milk and culture in it.  Many do have fruit packed in it that has sugar in the fruit base... however after a 5k that was sponsored by the yogurt company I worked for was over I'd eat two plain Greek yogurts because of the amount of protein in them.  I can't remember but I think each had about 16g of protein in them.

 

Some of the things labeled Greek make me sick with all of the garbage they put in it.  A lot will also come capped with granola or nuts which can taste decent in the yogurt however those will have a slightly higher fat / sugar content.  YoCrunch makes a really amazing Black Cherry and Strawberry Greek yogurt and their granola is excellent.  I have had a lot of experience with YoCrunch.

 

The fat in the yogurt itself of a true strained yogurt shouldn't be more than about 2.5g in a serving or around 4%.  If you see ingredients like NDFM (Non-fat dry milk), Sugar, stabilizers etc... it's a batched yogurt and it's not as healthy for you.

 

Sorry.... I worked in yogurt making strained and batched yogurt for 2 years...

Not a greek yogurt - or a frozen yogurt (well maybe frozen, since its stored frozen) ? Faux Yogurt - probably.

I was actually querying the fat content of 20%, and comparing it to say to a typically  Greek Style Yogurt in the UK is @ 9% fat.

Culture doesn't show up in those micro specs.  In fact our micro specs were lower for yeast and mold.  Coliform and E Coli were the same.

Oh wow your greek is that high?  Ours, for real greek, is lower.

Update on the Fogurt!!!

 

We successfully completed the test run that included this ingredient about 2 weeks ago. Went off without a hitch really. Just for anyone's future reference, the "Fogurt" came in frozen, like really really frozen. After slacking (4 days) it seemed to have the consistency of a heavy cream, slightly vanilla flavored, very slick mouthfeel. 

 

10 day sensory panel test ... no beuno. The product is straight-up gross. The oil has started to separate (or the emulsion is breaking) and the product has that same slick mouthfeel as the fogurt. I haven't heard the word yet but my guess is this formula is headed to the graveyard. 

However, I did receive a spec sheet for the next test formula in line and there  another Non-Dairy Fruit Smoothie base... the only way this one differs from the previous is that this one is acidified and going into a coffee flavored smoothie. (Looks like this is going to be a bumpy ride!) I can't seem to shake this crap!
