Poultry Sticking Knife

To all poultry folks out there, I am looking to source a new Poultry Sticking knife, the dexter-Russell cannot do the job for us as it doesn't hold up well enough which turns into a hazard I don't want, breakage, missing tips etc. Can anyone suggest an alternative? Currently using a scalpel handle with blades that can be switched out, but this isn't ideal either.

I'm not a poultry person, but I saw this when I Googled poultry sticking knife.

They sell game birds as well as chickens, so maybe it will work for both.
