3rd Party Cold Storage HACCP & Clients Food Safety Documentation

I enclose an example of the auditable requirements for a Cooling/Cold Storage HACCP  Certification.

 

The options in yr present case are perhaps, for example, as per sections, 2.2.7, 6.1.5, 6.1.6 etc.

 

I didn't read the whole document but, in this particular case, the answer to yr query may be NO for many, possibly all, aspects of customer product documentation if the stated requirements are fulfilled.

 

Basically the options derive from the scope of responsibility.

Hi, I am looking for some advice. We are a 3rd party cold storage warehouse looking to implement a HACCP system. We have no suppliers only clients who store their food, (meat, fish, vegetables, processed foods etc) with us for short periods within our chillers or freezers. We have a documented inspection protocol for the incoming product to ensure the goods are ok to store within our facility, and have a programme in place to minimise the risk of cross contamination within the facility.

 

My question is; as a 3rd party warehouse with only clients, do we need to ask our clients to provide us with any food safety declarations / documentation about the products they wish to store with us?

Thanks for replying...Not too sure what more info I can supply...We are attempting to achieve HACCP according to Codex Alimentarius...We have gone through the 12 steps including the 7 principles & are seeking clarification on the matter of whether we need any kind of food safety declaration or documentation for incoming food products from our clients...What more information do you need?

To rephrase -

 

Are you (or must you) have any other organisation, eg a 3rd Party / Government  audit  the  FS documents you are requesting assistance with ?

 

Or are you preparing the documentation mentioned solely for your own internal usage ?

 

Most people who have OPs like the current one are intending, for example, to obtain certification to some FS Standard or satisfy Local Regulatory Requirements. If so, this may have relevance to yr request.

We are seeking to be audited and certified for HACCP, (Codex Alimentarius requirements), by an international recognised external 3rd party certification organisation....I hope that was the info you were asking for.

The answer to yr queries  relates to  the scope of your HACCP Plan.

 

The scope is defined by the service which you are providing to yr customers, eg what is your responsibility with respect to FS as mutually agreed with yr customers and from which initial/final locations in the cold chain ?

 

The scope is typically the first question asked by any auditing company. Or it may be pre-defined within their Standard.

 

A possible HACCP plan (one CCP) for a cold storage (not, I think inc.chilled) situation  is here -

As you can see this Plan involved knowledge of the Products to be stored.

 

PS - another example plan is attached in post #4 of the above thread. The scope of this 2nd plan appears narrower than the first but still involves some product documentation.

Our scope is;

 

The HACCP study has been designed to consider biological, chemical, physical and allergenic hazards throughout the process of receiving product, storage of product and the handover of stored product to customers.

 

The following hazards were considered during the Hazard Analysis Study:

 

·         Microbiological Hazards – Note: As a 3rd party cold store with a variety of clients & products, consideration was given to pathogens associated with temperature abuse e.g salmonella, E. Coli etc 

 

·         Chemical hazards including cleaning agents, lubricants etc.

 

·         Physical hazards, such as the presence of foreign bodies, wood and glass etc.

 

·         Possible allergens such as nuts, celery, eggs, fish, shellfish and milk.

 

Other general considerations were also reviewed as part of Good Manufacturing Practices and the Pre-Requisite programmes.

We have worked accordingly to complete all of the above, but we are still querying whether it is standard practice to have food safety declarations / documentations from our clients.
