Hi All,

I am in a review process of our procedures and work instructions and my question is what legislative requirements are for storage, delivery (loading) and transport for poultry meat products ( frozen and fresh)?

If anyone can give me some reference it will help a lot.

Many thanks.

Cristina.

Hi Cristina,

For frozen :

- The product should be stored between -18 Degree  or colder

-  Dispatch temperature  can between -15 degree celsius or colder .  But, at any given time, the product temperature should not dip to -12 Degree Celsius.

For Fresh:

- The same can be stored and shipped at 1-4 Degree Celsius.

But, the same depend on the shelf life defined on the product, and your HACCP study. We handle fresh poultry products procured, stored and dispatched at 1-4 Degree Celsius ( has shelf life of 2 days)

Furnished the codex alimentarius and other  reference FYKI..

1. CODE OF PRACTICE FOR THE PROCESSING AND HANDLING OF QUICK FROZEN FOODS (CAC/RCP 8-1976)

2. http://dwb.unl.edu/t...ubs/storage.htm ( Reference on fresh polutry)

Many thanks Baskaran.G.,

I use for reference the CAC/RCP 8-1976, but I need more legislative reference for EU.

I had search a little bit but found nothing regarding mixing loading, for example it is ok to load frozen  chicken meat products ( like burgers) in the same truck with the frozen beef meat? It is ok to load and transport frozen finish product with frozen raw product? Were  can I find reference/guidance for this issue?

Many thanks,

Cristina

Hi Cristina,

Find link below for EU legislative reference:

http://eur-lex.europ...53R(01)&from=EN

Pls do refer: SECTION I: MEAT OF DOMESTIC UNGULATES- Chapter VII- For storage and Transportation,  SECTION II: MEAT FROM POULTRY AND LAGOMORPHS, and SECTION V: MINCED MEAT, MEAT PREPARATIONS AND MECHANICALLY SEPARATED MEAT (MSM)

little more information might help on the mix loading.

- Is it prepacked frozen product

- Prepacked frozen product packed in secondary carton boxes

-  What is mean by frozen finished product  ?

- What is mean by frozen raw products ?

Regards,

Baskaran.G.

Hi Baskaran,

The frozen chicken products are burgers packed in foil bags and than packed in carton boxes and than arange on the pallet.

Frozen finish products: like explain above.

Frozen raw products: frozen blocks of chicken breast meat aranged on a pallet and wrap in foil / or frozen blocks of beef meat packed and wraped on foil on a pallet.

Thanks,

Cristina

Hi Cristina,

I presume  you might not find any reference to your operation practices. All  you have to do to ensure and proof to any auditor and regulatory authority is that you have taken enough control measure to avoid the possibility cross contamination.

According to me, it is okay to transport frozen finished and chicken meat products together with enough control avoid the possibility cross contamination.

Hi Christina

Download the meat Industry Guidelines (MIG) from the FSA web site

Chapter 17 is the packing and transport - this might help
