is there anyone know about how to clean and sanitate fruit and vegetable for salad product?

i need all the way and reference about how to clean and sanitate fruit and vegetable for salad product.

Hi Rainer,ideally you need a no rinse food grade sanitiser. I'm not sure what is available in your country but chlorine based washes are widely used.
You would be looking for something with a concentration of around 40-60ppm.
The way my facility works is whole produce is pre washed in a stronger concentration of 150ppM, then re washed upon entry to the high risk area in a lower concentration before cutting.

Obviously you need to take into account the sanitation of your area and equipment. Cut one product at a time and ensure all equipment (knives,peelers) etc are also sanitised when changing from one product to another. Your local chemical supplier should be able to help you with these choices.Many countries have additional requirements so I would check there also.
