How to prolong the shelf life of chocolate gananche?

Hello,

 

i have a problem with my chocolate filling, i don't know what additive want to add in chocolate to prolonged the shelf life. Recently the shelf life was 7 day only in room temperature and 1 month in chilled temp.

 

any suggestion the additive i should add in my chocolate??

Using fresh cream?

i'm not using fresh cream, only used UHT full cream

i was looking some additive to pro-longed my shelf life, before this i used potassium sorbet,

 

or anything other than potassium sorbate??

Grab some desserts off the shelf and see what they're using. This likely isn't a unique problem.

 

Natamycin is a cool natural preservative, but not sure It's got any GRAS references for chocolate at this time. You might piggyback on a similar product for approval/use levels. Don't know if sulfites are an option for you either.
