Testing required to confirm cream pasteurization

Hi all,

 

Could anyone shed some light as to what testing they conduct on cream to verify pasteurization is successful on cream?

 

Currently we conduct the Phosphatase Test on cream and milk, however a recent audit indicated that we should be completing a Peroxidase Test on the cream instead.

Phosphatase Test is a good and approved method.
