Are there any standards / guidelines for developing cleaning recommendations of non food contact components within a machine for example within the control panel, and the electronics, while although part of the machine are not located in the food handling area. Currently I am looking at the AMI Sanitary Design  & NSF/ ANSI/ 3-A Standard, but don't refer to the working hub of machine. Thank you

Hi!

there are no specific rules for cleaning non-food contact surfaces, however there are some indirect requirements:

1. if you use chemicals, they must be approved for production/food handling area use.

2. the method used to clean must not increase contamination risk to product (i.e. using air to blow out the control panel may increase risk of physical and biological contamination, so vacuum is always a better option)

3. have documented instructions for how you clean non-food contact items, and include the food safety requirements (i.e. shall only be cleaned on non-production days, etc.)

4. If available, you can use the equipment manual as a guideline.

cheers!
