Pink Patties in pork production

Hello Everyone,
I was wondering what would cause a patty to turn pink on the inside. It was not raw but they seemed to be puffier than usually, which made it harder to package. Would these patties be okay.

Looks like nobody knows the reason but at least you are not alone.

Is it a pure patty or do you have other ingredients such as an extender like soy protein or spice such as celery? And is it pink through out, in the middle or ringed around the outside?
