Homogenizer placement in fruit nectar processing
Started by Rizwan Ali, Dec 04 2016 02:47 AM
Our fruit nectar process flow is given below
Blending tank-----> pasterizer for preheating----> deaerator @ 65C---> homogenizer @ 65 --> final hearing ----> cooling and aseptic filling
Now we want to place homogenizer after blending tank and do homogenization @30C.
Can anybody share process flow? how to control extra pressure of homogenizer?

It is recommended to have degasser and homogenizer before the product storage tank to make sure of the proper homogenization. From your current process flow, any failure in Homogenizer may affect the product quality and there is no provision to analyze the effectiveness of homogenizer before filling.
