Food Fraud Program

We use a system loosely based on BRC / M&S (UK retailer) and TACCP requirements.  Basically we start with our finished products and look at what claims are made on them, then check we can substantiate those claims and if they are at risk of errors on site causing them to become invalid.  Then we assess those steps which could be already controlled by a CCP or prerequisite or may need a new "vulnerable error point" control.

 

Secondly we assess all of our ingredients and use sources like the RASFF to see what authenticity and fraud issues have occurred in the past.  Again, we put all this into a table and identify any which require further monitoring, e.g. testing programme.  We also meet reasonably regularly (6 monthly minimum) and discuss any issues also including security concerns with our sites.  We have a horizon scanning log where we log any relevant recalls / alerts / info which may be a root cause of fraud (e.g. reports on price increases on commodities) etc.

 

We're a little way off being where I want to be but it seems to have satisfied most auditors so far.
