CCP / OPRP sieving process
Good Day Food Safety Team Leaders
My name is Rita from South Africa, currently employed by a Food Repacking company in Durban.
Core Business is repacking of sugar into prepacks (500g - 25kg) and into mini tubes used mainly in coffee outlets.
My current HACCP study on the packing procedure is the use of sieve which was a CCP and have since changed to not being a CCP, as we are not absolutely sure that nothing can go through the sieve.
In my last FSSC audit, I was advised by the auditor to review the process and to maybe change the Sieving process an OPRP
(Operational Pre-requisite Program).
Can anybody who has the similiar process and if you have OPRP in your process please forward me infomation regarding what additional paperwork is required.
I hope to have this in place before my next FSSC audit, which is just a month away.

Please have a look at post2 which offers one, specifically fssc22000, answer and one (FS-ISO HACCP) response -
I would gauge that you could most likely still consider your sieving still as a CCP or as a OPRP as you see fit however, your critical limits will be somewhat governed by the mesh size of the sieve you are able to use. The next point to consider is whether an addition control step would then be required to 'eliminate or reduce the perceived hazard to an acceptable level' should you determine the mesh size you can use is unable to achieve this.

An OPRP is not required to have critical limits.
Thanks for clarifying that Charles, indeed you are correct I was just trying to highlight the options should Rita wish to keep the sieving as a CCP for which this would be a consideration :-)

I've always quite liked this Kraft approach for traditional haccp although a risk matrix obviously allows more flexibility than the black/white decision chart provided -
