Total polar component limit reference for frying oil

Ahmed,

Total Polar components / Matter can be used in the Frying Industry as a minor indicator of the quality of frying oil. Different Industries have different metrics for assessing oil quality. In our case, we monitor TPMs of Palm oil thrice per shift. SOP specifies that when the value is 21%, oil filtration & replenishment must be done. 25% is the acceptable upper limit.

 

Measuring the p-Anisidine value, Free fatty Acids and Peroxide values gives a better indication of the quality of the frying oil.
