What does an USDA inspector do at a catfish processing plant?

Hi All:

 

USDA has recently taken over monitoring catfish production in US. Can anyone tell me what an onsite USDA (FSIS) inspector regularly do at a catfish processing plant?

 

Are there any documents/references that outline what they need to do?
