Food Safety considerations when packing Jam into Glass Jars?

Hi All

 

I need assistance please.

 

we would like to start packing our Jam into Glass Jars.

 

what are the implications to this and what standard should be followed?

If I were confronted with the same question, I would build my "Glass management"-system around the Clausules of the current BRC Norm (under: "Products packed into glass or other brittle containers").

since glass is a brittle material you will need to control the hazards that the glass creates from the point of receiving, storage, and processing through to shipping.  Inspection of pallets at the point of receiving for broken jars, if there are any damaged ones they should be disposed of in a dedicated glass garbage and the area swept and or vacuumed to remove any small shards.  A suggestion would be to have a dedicated glass cleanup kit to minimize the change of the same cleaning equipment being used in another area of the plant and spreading glass bits. 

During processing you should have some sort of inspection of the jars to remove any chipped, cracked or defective jars as they may break during handling or while you are hot filling them. There should be a procedure of what to do if breakage occurs at any point along the filling line i.e.discarding "x" number of open jars before the break and after the break since you wont know if broken glass got into them.

For many cases the preferred choice of FS Standard (if that;s what you meant) are driven by customer requirements, not your own.

 

i would suggest you first seek some examples of haccp plans for jam in glass jars.
