Hi all, im working as  Document Specialist in a Cookie factory, and im kind of new, we were reviewing our Allergen management policy and it doesn't match what we are are actually doing, we use to have different allergens in our cookies (Peanuts and tree nuts) a few years ago but that has changed, all of our product now contain the same allergens, which are eggs, wheat, soy and milk, so im having a hard time trying to figure how to handle all of the SQF requirements to match our current system, can any one help with a policy or any input? I would really appreciate it.

A plant with the same allergen profile in all products, that declares those allergens on all labels, is effectively a plant with no allergens for the purposes of cross contamination. Your critical areas will be:

Labeling, ensuring review occurrs to make sure those allergens are ALWAYS declared on labels.

Incoming materials and personnel contamination with allergens NOT found in your facility.

You get a free pass on validating your cleaning for allergen residues since they pose no risk in your products.
