Do I have to retake the SQF practitioner exam for edition 8?

Years back there was a requirement that all SQF Practitioners had to attend a training sessions, but the requirement stopped about 3-4 years ago, thus in answer to your question - No.
The requirement is that you must be knowlegable about your SQF system and your role.
Which would be the same for your back up as well.
Exactly. Having your old certificate will cause your auditor to generally not dig any deeper, provided you aren't bumbling through your entire audit and you're familiar with the changes from 7.2 to 8. Also, yes, your designed backup/nominated deputy should have a level of understanding and training relatively close to the SQF Practitioner for the site.

I took the conversion course through Alchemy Systems. It didn't take very long, and was helpful in understanding the new information without having to go over the entire code. It wasn't necessary, but my auditor appreciated it. I think it shows you are committed to improvement.
