Hey Matin,

 

There are several manuals that are passed out as class materials through programs that offer HACCP programs.  Unfortunately, it is frowned upon photocopying them and sending them out.  There may be some copyright issues.  A good place to start is the FDA's HACCP program (attached).  It will assist in getting you the basics and then from there we, as forum, can help you fine tune it.  Hope it helps.
