Documents that explain and prevent food fraud
Our food fraud policy was accidentally written into some of our other policies. I took from them, created a VERY basic risk assessment of our ingredients, suppliers, and supplies and put them all in one document. This satisfied our SQF auditor. What they want to see is that you have assessed all the possible risks to your facility and addressed them in some way. Ours is mostly addressed by "long standing relationships with supplier, our supplier evaluation form for new suppliers, and COAs on ingredients when available.
