Fat Measurement in Liquid Product
Hello IFSQN community! I'm looking for a way to measure fat separation by % in a chilled soup product. I don't have a big budget for this product and it's not a critical measurement.
I've been thinking if I get some sort of Whatman filter paper and pour the chilled broth through and compare the separated weight to total weight, that would be a pretty good rough measurement. Does anyone have any recommendations for this process? A certain type of filter paper, different process, etc?
Any feedback is appreciated! Thanks!
What about just using a clear lab beaker? You could put in 500 ml of the finished product and just visually observe after 24 hours to see how many ml have separated out, then you'd be able to do the math to get a %/volume of fat
Dear Sarah,
Another rapid method could be the by using a centrifuge. The device in the link is more sophisticated than foreseen by you, however it illustrates the principle.
