2.6.1 The HACCP food safety team shall verify the accuracy of the flow diagrams by on-site audit and
challenge at least annually. Daily and seasonal variations shall be considered and evaluated. Records of
verified flow diagrams shall be maintained

Should be auto-included within the scope of HACCP Verification.

Should be auto-included within the scope of HACCP Verification.

Couldn't agree more.
The guidance notes state:
"The flow diagram shall be verified as accurate. A member of the HACCP food safety team who is based at the site, part of the team or the whole team must check that the flow diagram is accurate 'by an on-site audit and challenge'. This may be achieved using a physical walk-through of the process within the production area. A report of the activity and any findings will help to demonstrate that this has been completed".

This clause hasn't changed from Issue 7 and indeed irrespective of the choice of certification scheme should surely be a basic part of HACCP to verify the flow diagram?

We'll be sticking with the same process walk with several team members and physical sign-off of the flow diagram - this is done every revision of the HACCP plan, so at least once per year.

I suggest you specify the lot# of the product being verified in yr verification walk. Many flow charts include several options in the flow, giving different products, within a HACCP plan, and is hard to believe that in one day the facility was actually elaborating all those products so to verify the chart,

Twice a year, HACCP team walks each production line with flow diagram. Part of HACCP review, works a treat as it makes them think about things in a different way from their usual day to day work. Team drawn from all areas of the site, Quality, Production, Admin, supervisors, procurement, logistics. It brings everyone back to the basics of what we are trying to achieve.

can you please post and example here??

Hi Bipin,

You take a flowchart and walk it.

The only potentially argumentative aspect afaik is as to how (ie by whom) the flow chart should be signed as documenting the verification. There is a recent thread here discussing this.
