Hi All .

 

I need assistance , my product is blowing , it is a fruit blend nectar concentrate 40%.

 

Where do I start my investigation?

What microbiological results are you seeing?
Blowing juice-based products usually makes me think yeast, but it could be other things too.

Would be useful to know:

What's in it - preservatives etc?

Processing - pasteurised?

How is it packed?

How is it stored?

How quickly after production are the problems becoming apparent?

I agree with pHruit, it sounds like Yeast contamination this is usually post processing contamination, but more information is required in order for you to receive sound advice.

If it is a UHT type product packed in the usual brik type packaging, then a check of the sealing and for small scratches/pinholes would be a good place to start after the obvious micro contamination checking. Also look at a pattern -  is it the whole  production, only after a certain time, sporadic etc?

Thanks Guys for the feedback. really appreciate it. I sent the contaminated bottles for micro testing , I checked the whole process of manufacturing and found out the there could be a list of where the contamination comes from.

I am waiting for results on sample.
