I am planning to do Accelerated shelf life testing of Mozzarella cheese.
Does anyone here have experience doing this test? Please share your thoughts.

Unless you have the relevant equipment for this work & your laboratory is accredited it may be quicker/cheaper to approach a third party to complete this analysis for you depending on how you plan to use the data generated?..
