I am interested in finding out any specific conditions ideal for packaging mayonnaise. Should the containers be sterilized and the mayonnaise be exposed to air?
Is a sterile terminal filter at the point of compressed air entry a CCP?
Sterile water sampling to determine the potability
Whirl-pak sterile bags have a powdery, cloudy substance on the inside of the bag?
Pasteurised milk filled into non-sterile bottles
Quick check to see if product is sterile?

this should be done aseptically with no exposure to outside air. and yes, container AND closure should be sterilized prior to fill
UNLESS you're doing pasteurizing POST fill
generally there is no kill step post fill on mayo
