Sterile bottling of mayonnaise

I am interested in finding out any specific conditions ideal for packaging mayonnaise. Should the containers be sterilized and the mayonnaise be exposed to air?

this should be done aseptically with no exposure to outside air. and yes, container AND closure should be sterilized prior to fill

 

UNLESS you're doing pasteurizing POST fill

 

 

generally there is no kill step post fill on mayo
