How do you check frozen meat & seafood temperature prior receiving from supplier?

I assume you know how to use a thermocouple thermometer.

 

Assuming it's in "blocks"  in a refrig. container in cartons at ca. -18degC, you measure (external) the temp between touching adjacent cartons in various appropriate locations. This is a Codex procedure.

 

Theoretically the same logic applies to IQF also however I have known surveyors to stick a probe through the carton wall and internal wrapping. This is obviously a destructive method so hardly ideal.

 

The method is only reliable if the contact between thermometer probe and adjacent cartons is good.

It's abbreviation for "circa" meaning "approximate". Quicker than approx. :smile:
