Safety of frozen fishcakes stored at -12C instead of -18C

We have freezers that occasionally is not working in ideal temperature. We knew the correctlive actions is to fixed the freezer to ideal. However, we would like to know if food temperatures such as frozen fishcakes are -12 deg C while ideal is set at -18 deg C.

Would cooking/cook food to its minimum core temperature be sufficient and make it non-harmful? i.e. all food stored required to be cook thoroughly.

What does your HACCP say? What are your CCPs? Also do you buy these fishcakes? You may want to check with your supplier and their specifications. This may also be a quality issue. 

Hello, you shall not put the safety condition to the consumer. Your responsability is to produce safe products. If you have a significative hazard that needs a control measure, and you don´t have an  adequate control measure, then you enter the loop in the traditional Codex CCP desicion tree, to modify your process,

A level of -12degC does not typically represent a safety "defect" as compared to -18degC but may relate to shelf-life quality changes.

 

haccp references exist that utilise a critical limit for freezing foods to be attaining a maximum core temperature of -12 degC.

 

IMEX home refrigerators typically do not attain -18degC.

-12oC is very unlikely to be a safety issue, no bacteria are growing away down there but it could very easily be a quality issue.
