How long can you keep Frozen Baked Cakes after defrosting?

Hi Everybody,

 

I just want to know how long we can keep a frozen cake in display shelf after defrosting. Is it 3 days or 15 days. 

I came a cross similar situation, in our bakery dept we importing frozen cakes (cheese cakes, sponge cakes etc.) from different countries. In some cakes it clearly written "should consume within 3 days/4 days/14 days after defrosting at room temperature" but for some cakes no special instruction is given only says " defrost in room temperature then keep in chiller display".

 

I am also wondering is it ok to defrost in room temperature. and what should be the shelf life after defrosting...

2. conduct quality tests daily, since Your quality standards may be different.

You should have a general SL when complete.

We do conducting quality checking daily. Have to ask the supplier. I was looking that is there any general criteria for the expiry dates after defrosting.

Yr query is highly generic, eg what kind of cake ? How was it thawed/defrosted ? Obviously the possible scenarios are legion.

 

There are literally dozens of answers to "versions" of yr query on the Internet. Particularly associated with queries on "sell-by" date. Most links seem unvalidated in a scientific sense although I anticipate that reputable brands will be competent to answer specific queries as suggested in Post 2.

 

I assume that "thawing" maintains the original frozen quality. (there are dozens of comments on this also !!)

The cakes i talked about was Cheese cake & sponge cakes (Eg: Japanese cheese cake, Victoria Sponge Cake). Its written on the cake that defrost at room temperature.

Some cakes clearly says consume within 3 days after defrosting, but some says nothing simply defrost and chilled display. 

I was wondering how much days should i give to those cakes..

(I am Hygiene officer for our region..If I didnt give them a correct answer the chefs will put expiry dates as they & in case of any hazards..how to tackle this situation. 

On Friday morning I bought a defrosted chocolate cake for a neighbor that came to my rescue when I fell down that morning.

Unfortunately they were not at home Friday afternoon and thinking the cake might go bad we ate it this weekend.

It was very good, dense cake, real buttercream and having Panama coffee with it was a major plus.
