Is it technically correct to call BBQ processing as cooking?

We are producing kababs through BBQ processing. While mentioning this process in HACCP documentation, we need to write it down under the category of cooking/frying/baking process. Can we called BBQ as cooking? Or it is a sort of baking over coal / charcoal?

Meat balls with spices mixed (renowned as Seekh Kabab) wrapped over the skewers and skewers are kept rotating over burning coals until they are done.

I guess if the process is shown through trials to be requisite to get the core temperature of the meatballs to your defined critical limit for temperature then yes that's your cooking step. 

 

Having said that, you'll probably need to verify that the coals are always at a high enough temperature to get the meatballs to the correct temperature- it's not like an oven with the temperature on a dial or water that you can see is boiling and therefore has reached 100°C. I wouldn't know if there's a temperature coals start smoking or changing colour at...

If it fully cooks the product then it's a cooking process.

if it involves a kill step (heating product to a suitable internal temperature to kill pathogens), then it would be considered cooking.
