Inexplicable color change in juice products
Hello,
Recently we have noticed a weird phenomena in one of our juice products. It is about a color change, the finished products which are juice bottled in PET have turned to a clearer color. This has happened when some samples where exposed to the sunlight. In few hours they changed their color becoming clearer and that was accompanied with a change of a smell knowing that the product is pina colada juice.
Any ideas ?
What is the actual composition of the blend?
Is there actually a change of colour, or more a change of appearance / clarity?
Pineapple juice is often somewhat unstable and will settle quite quickly, giving a clear supernatant and thin layer of pulp that falls out of suspension. Is the product homogenised? Any use of stabilisers?
What character are you noticing in the flavour change?
May also be useful to know what your process is - aseptic filling, pasteurisation time/temp etc?

Composition : Pina colada compound, sugar syrup and additives
It is rather a change of clarity
There are no pulps in this type of product
I really can't identify or describe the flavour change
Yes it is an aseptic filling, pasteurization = 92 °C/ 23 sec
It's quite difficult to attempt to diagnose without being able to see/smell/taste the product and not knowing what's in it ;)
What is the formulation of the Pina Colada compound, and is it a clear or cloudy product?
What are the additives?
Is the compound and/or the finished product homogenised?
Might be useful if you can attempt to describe the flavour change - is it an off note, or simply different to what it should be? Would you describe it as "chemically"? How quickly is it manifesting after being bottled? What micro testing do you do, and was it all clear?
Photos of the "normal" and problem blend might also be useful.
Sorry for all the questions, but there are a lot of things that could potentially happen and the only way to try to help is if we understand what the product is and what the problems are.
