Hello IFSQN community!

 

I am not new to IFSQN however, I am re-visiting the website this time as an independent consultant - a very exciting endeavor for me as a young professional in the food safety sector!

 

I am helping a local coffee shop obtain its processed food registration for its newest facility which will involve specialty coffee roasting, cold brewing and bottling. As of now, our goal is to obtain Processed Food Registration in California (here is some information for those who are interested in what I am getting myself into).

 

If anyone has any particular knowledge in the area of specialty coffee roasting, cold brewing, or anything of this topic - please send your knowledge and resources my way!

Always glad to make other friends in coffee! Seems like there are more and more of us food safety folks in the industry these days. I'm working on SQF certification for a specialty coffee roaster as we speak, and my background is in both roasted and cold brew coffee. Feel free to reach out if you ever have any questions!

Coffee Roasters here as well, though we don't do cold brew.  Put coffee in the title of a post and I will be sure to see it, hopefully able to help!

I too came from a specialty coffee roaster / cold brew bottler though I have moved on to another company now. Same as above, if you post any questions with coffee in the title I am sure to respond. I was there when we started doing cold brew and it was a struggle because there was no reference documents since it was still a very new concept (this was maybe 3 years ago?). Always here to help!

hi @S@feF00d4@ll did you ever get the information you need? i shifted from dry baking blend manufactuirng to coffee roasting and beverages. would like to connect with you and pick you brain...........

I also came from a large conventional coffee roaster that had smaller on-site operations for specialty coffee roaster & cold brew bottling though I have moved on to another company now. Same as above, I love coffee topics.

 

 

FYI, your link spells out "Process validation including microbial challenge studies". If your cold brew is a low acid product, you'll need help from a Process Authority there.

hey @jsu3002j we are currently working with a process authority and although they approved our process now they are making us address L. Mono. I did submit our environmental listeria program and finished product testing process. Waiting to hear back

I would plan to have them on-site to audit eventually. It's the best way to make sure everyone is on the same page and alleviate all concerns.
