I work in a company which makes soft gummi candies. Our products have low water activity, contain high sugar concentration and do not have proteins. So they do not provide much favourable conditions for micro organisms. There are no allergens in the plant. We have a sanitation control program. Do we need to consider the sanitation control program as a preventative control?
