How to conduct a risk assessment on environmental swabs in a chilled environment dealing with salads?

Hi I would like some advice on how to conduct a risk assessment on environmental swabs. It is a chilled environment dealing with salads. So far data has been collected since 2018, but still not sure how frequency on sampling. Thanks
