Will a portable sink be acceptable to SQF?
hello, I am wondering if I can have a portable sink to pass the SQF audit and does the quarantine have to be a certain size? I got a cage that is about 6ft W and about 10ft H and it is also on wheels, it has double doors and it will be locked. Will this be an issue for us to pass the sqf audit? I am more concerned about the guidelines for the sink as the one we are going to have is portable, not hooked up to a pipe system, but it will have hot and cold water as needed for sqf.
So long as it is working properly, properly maintained, and properly stocked it shouldn't pose an issue. Of course, I'm assuming this is in an outside area?
If indoors, two concerns would be proximity to product, ingredients, packaging and water on the floor.
Yes, I have seen portable sinks used to satisfy handwashing station requirements in production. I am not 100% sure they liked it, but it worked. I will tell you that they are a PITA to maintain properly, but it is a LOT less expensive than installing plumbing, stainless steel sink basin with touchless or leg-activated taps, etc.
Just make sure you consider all possible scenarios involving the portable (leaks, etc) and have a plan in case something happens to it.

Are you planning on locking the auditor in this cage? Sounds like it would be big enough... (JK).. What is the purpose of the quarantine cage? Is the sink going inside of it?
A hot water booster unit is mounted under the sink and there is a roll in wall bracket that has a towel dispenser along with soap and sanitizer dispensers.
These work out ok, except they are maintenance/resupply intensive and cost around 1500-2500+ but they will pass an SQF Audit.
I am not sure I understand what you mean with the cage, but we have clients that have roll in portable stainless steel sinks with tempered water and two tanks - one with fresh water and the other as the waste water holder (grey water tank) located under the sink.

Yes that sounds exactly like the one I just bought it has tanks under it and we will run lines for the water hot and cold. And I will buy wall mounted soap dispenser/hand sanitizer/ towel dispenser.
