How to check the damage of particles when it is treated during thermal process?

Hi All,

We are developing the liquid milk with particle as nata de coco, wheat, oat,.. Do you know the method to check the damage ratio of particle when it is treated during thermal process. Please advise us.

You might check if there are any technical or scientific papers available on what laboratory testing could be done, such as an AOAC method.  Alternatively, do you have a supplier or trade association that might have a test method available?
