What is the difference between control measures and monitoring in a HACCP Plan?

You can also look at example layouts of a Codex-type hazard analysis.

 

A typical haccp progression is something like -

 

(a) define the process

(b) define the hazards at each step

© define appropriate control measures for the hazards in (b)

(d) define the significant hazards from risk assessment > CCP(s)

(e) define and validate the critical limits for the control measures associated with the CCPs in (d).

(f) define the routine monitoring procedure to verify that the critical limits in (e) are observed in practice.

 

Validation in HACCP context is ideally a separate, preliminary, investigation implemented before the process is routinely carried out.

(There are an almost infinite number of types of "Validation" depending on the context).
