How to prolong the shelf-life of Ready-to-Eat Pre-Cooked Meals?

Hello,

 

I need your help.

We are planning to put ready-to-eat meals in convenience stores; for example, Chicken Biryani.

How can we prolong its shelf-life, and how many days can we keep it the store given the temperature is chilled (5C)

 

Also, is the use of UV food sterilizer will help us prolong the shelf-life?

That really depends on the packaging type, storage conditions pathogens that might decrease shelf-life and sensory aspects of your products.
Can you give a bit more detail?

It would probably be easiest to consult a local specialist to advice you. 
There are a lot of ways to tackle this problem. Leading to a shelf-life of a few days (fresh in MAP without additional preservatives) or even a couple of months (freezer of vacuüm packed).

JFI I have attached a simplified, worked out example for the estimation of the shelf life of chilled, salmon-water cress sandwiches.

 

Yr product may well involve a similar calculation chain / expert involvement.

Yes, we are considering the use of MAP.

Gotta work on the best packaging material for these cooked meals.

 

As these meals are served together with rice.

We are thinking if it will be best if we separate the rice with the viand.
