How to Clean Knives?

How do you guys clean your knifes after production? Can you give specifics?

I don't have much input here since most of my experience is without knives.  However, last facility we used knives to open ingredients bags / boxes and cases of packaging materials.  The ingredient knives were red and we would clean those daily with food safe detergent (same detergent we used to hand clean areas of process equipment).  After cleaning leave in bucket of sanitizer for a minute and then autoclave.  The autoclaving was probably overkill, but since we used the autoclave daily and had the time we did it this way.

 

The cases of packaging materials we would hand clean and sanitize daily, and autoclave these once per week.  They hardly ever got wet, let alone dirty.
