Red Yeast Rice used in canned food as food colourant

Hi everyone, I want to ask about red yeast rice as food colourant in canned food. Does anyone know the risks of using it in canned food especially thermofilic bacteria contamination. Thank you

I see that you have not had any answers to this question. 

 

At the very least, you should check whether it is legal to use this in foods and whether it has been approved as a color (both in the country where you will make the product and in all countries where it will be sold).  It is  a dietary supplement in some countries and has some potential pharmacological consequences that impact its legal status.
