FSSC 22000 2.5.7 - Environmental Monitoring Risk Assessment
Hi all. How do you evaluate the effectiveness of control measure as stated in the standard below.
- By Forms (Checklist such as Sanitation Audit, Cleaning and Sanitation Checklist)?
- By Reference Document such as procedure, guidelines?
Thank you.
2.5.7 ENVIRONMENTAL MONITORING (FOOD CHAIN CATEGORIES C, I & K)
The organization shall have in place:a) Risk-based environmental monitoring program;b) Documented procedure for the evaluation of the effectiveness of all controls on preventing contamination from the manufacturing environment and this shall include, at a minimum, the evaluation of microbiological and allergen controls present;c) Data of the monitoring activities including regular trend analysis.

By the results of implementing monitoring programs for OP's (a-c) as compared to target objectives. = Verification of PRP.
Hi Charles,
Can you explain further? Thank you.
So basically this is my Environmental Risk Assessment
Zone: Zone 1
Area to Monitor Environment: Dispatching Area
Food Packaging Contact: Forklift
Severity: 3
Occurrence: 3
Existing Control Measure: Forklift and lifter push cart shall be maintained clean at all times & shall be in good condition at all times, otherwise coordinate any maintenance problem with Engineering & Maintenance for repairs
Documented Procedure: Cleaning and Sanitation Program, General Warehousing Procedure
Effectiveness of CM: 0.5
Risk Score: 4.5 / Not Significant
Frequency of Doing Control Measures: Monthly
Evaluation of Effectiveness of Control Measure: ?
What to look for?: Dust, Dirt, Grease
Environmental Test Methods: Grease Testing
By the results of implementing monitoring programs for OP's (a-c) as compared to target objectives. = Verification of PRP.
Hi po6,
Please supply a little context.
What is the product/process ?

Hi Charles,
Our main product is Flexible Packaging. The identified zones are receiving/dispatching area, storage area and areas in production.

Thks yr info.
Yr query has (sort of) appeared in a few previous threads here, eg -

I assume you have already implemented some micro. swabbing procedures.
The (micro) effectiveness of yr Sanitation Program will be judged (verified) on how well the results comply with yr criteria (ie limits) for acceptability.
And, apparently, FSSC also require you to do allergen testing (!).
I deduce that these requirements are somewhat aligned to FSMA expectations.
PS - JFI, If you browse the BRC Packaging forum, you will see references to a BRC Guidance that bacterial pathogen monitoring for typical packaging materials is probably not necessary due failure to survive. A posted link (see Post3) in the 1st link above generally supports BRC's comment for cardboard and plastic materials although the decrease is apparently faster for the former material. PPS - there is also a IFSQN webinar on this general topic although not specifically oriented to FSSC22000. IMO the Q/A session is as interesting as the presentation.
Thank you Charles.
