HACCP Study - dry blending RTE manufacturer adding dry egg powder an sesame seeds to our ingredients
We are a dry blending RTE manufacturer adding dry egg powder & sesame seeds to our ingredients -neither are currently present in the plant. What Biological, Phyical & Chemical ( besides being an allergen ) should I be including in the HACCP? We are treating the sesame as an allergen. Thank you in advance!
Have the sesame seeds been heat treated? The dry egg is pasteurized? The general micro load that may be present
Both could contain foreign material from their processing
Chemical---do you need to clean differently- will you validate the allergen removal post batch?
Sesame has been heat treated & the egg pasturized. Both manufacturers are GFSI certified. We will not clean differently. We currently use 3D Reveal for 2 out of the 4 allergens we handle. We based it on amount of produced annually - other wise we use Neogen Accuclean Advance after all other allergens.
The finished product with the egg will be packaged on a retail line that has a separate filler ( if that matters).
Would I need to do a Food Safety Plan Reassement as well ?

I assume you also treat egg as an allergen.
One obvious potential hazard is contamination from the process/environment.
Yes - egg is a new allergen for us. Contamination from the manufacturer? Would the preventative control be Supplier & COA/Micro? I don't realy know what the Biological Hazzards as I am unfamiliar with egg. ?
Pathogens – B. cereus, pathogenic E. coli, Salmonella, L. monocytogene

I work in eggs----I would only worry about salmonella, and that would only occur due to process failures at the egg processor
Yes your supplier approval and requirements for receiving (CoA etc) should cover that

Are you required to comply with FSMA ?
Cross-Contamination = especially GMP issues = haccp PRPs = f (allergens not declared on label / process equipment / food contact surfaces / employees / building / etc, etc)
I'm sure you must be only too familiar with the US thoughts on L.monocytogenes in RTE products
CoAs need to be Verified. Seeing is Believing.
Yes we are FSMA compliant.
We require the COA (verify ) before the product is received.
