Micro limits on machinery used for food packaging production

Hi everyone, I am conducting a HACCP study for a company producing bags for food, I would like to know where I can find the micro limits for the surfaces of these machinery and what microorganisms to tests for on these surfaces? Thanks

Plastic bags ? High temperature process ? If so the typical answer is sterility assuming negligible post process contamination..
